Stuffing is one of those Thanksgiving dishes everyone has opinions about. I make it two ways: moist inside the bird, and this crispy baked version in a pan. This one is the crowd pleaser. It all comes together in one pan, which means fewer dishes on the busiest cooking day of the year.
I use my Staub cast iron braiser for this because it goes straight from the stovetop to the oven, then right to the table. The sausage, apple, and celery cook down together, the bread cubes soak up the chicken stock, and ten minutes in a hot oven gives you that golden crispy top everyone fights over.

Crispy One Pan Stuffing
One-pan stuffing with sausage, apple, and celery, baked until the top is golden and crispy.
Ingredients
Method
- In a large oven-safe pan, cook the ground sausage over medium-high heat, breaking it up, until browned and cooked through.
- Add the shallots, apple, and celery. Stir until the shallots are soft and fragrant.
- Stir in the black pepper and butter until the butter melts.
- Pour in the chicken stock and bring to a boil.
- Add the stuffing cubes and stir to coat. Cover and let sit 2 to 3 minutes.
- If making ahead: let the stuffing cool, then cover and refrigerate. When ready to serve, bake at 375 F for 10 to 15 minutes until heated through with a crispy top. If serving right away: bake uncovered at 375 F for 10 minutes until the top is golden and crispy.
Notes
A pan that can double as a serving dish works best here. The recipe can be made ahead through step 5, then baked when ready to serve.
