Rainbow Confetti Cookies

Rainbow Confetti Cookies

These are so fun to make. They’re perfect for a birthday celebration. You mix everything together, roll them in mini M&Ms and sprinkles, bake them, and they come out looking like a party. You can customize the m&m colors for holidays/ theme parties and same goes for the sprinkles.
The dough is simple. The fun part is rolling each ball in extra M&Ms and sprinkles before they go in the oven.
I swear by a baking scale for accurate flour. Flour is dense and packs differently depending on how you scoop it. I also use a silicone mat so nothing sticks, plus it’s reusable and dishwasher-safe, a cookie scoop so everything bakes evenly, and a cooling rack to so air circulation underneath keeps the bottom from getting soggy. Cookies will stay crispy on the outside and chewy in the middle.
Prep Time 15 minutes
Cook Time 8 minutes

Ingredients

  • 8 T butter 1 stick, melted
  • 3/4 C granulated sugar 150g
  • 1/2 C brown sugar 106g
  • 1 1/4 t kosher salt
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1 egg
  • 1 T vanilla
  • 1 2/3 all purpose flour 200g
  • 1/2 C mini m&ms + 1/4C for rolling
  • 1/4 C rainbow sprinkles + 1/4C for rolling

Method

  1. Preheat the oven to 375°F.
  2. In a bowl, stir together the melted butter, sugars, salt, baking powder, and baking soda until the mixture resembles wet sand. Add the egg and vanilla extract and stir until combined. Set aside while you measure out the flour, M&Ms, and sprinkles.
  3. Stir the flour into the wet mixture, then fold in the M&Ms and sprinkles.
  4. Using a #40 cookie scoop (or divide the dough into 24 portions), scoop the dough onto a parchment-lined baking sheet. Press additional M&Ms and sprinkles on top of each portion.
  5. Bake for 8 minutes, until the edges are golden. Do not overbake. Transfer to a cooling rack and let cool completely.
