Crispy Cheeseburger Wontons

Smash burger meet wonton wrappers. Ground beef, American cheese, and caramelized onions get folded together into a filling that tastes exactly like the inside of your favorite burger, then wrapped up and fried until crispy.

I slice the onion with my favorite chef’s knife and cook everything in my All-Clad pan with higher sides, enough surface area to caramelize the onions properly, but tall enough to keep oil from splattering during the fry. A quick burger sauce on the side, and a pair of mini tongs to flip these without splashing yourself, and you’ve got a game-day app that disappears before halftime.

For the crispiest wontons, keep the oil at a steady medium heat. Too hot and the wrappers brown before the filling warms through, too cool and they soak up oil. Don’t overfill, a small spoonful per wrapper is plenty, and seal the edges well so nothing leaks. They disappear fast, so I always make a double batch for game day.
