Double Chocolate S’mores Cookies

If a s’more and my double chocolate chip cookies had a baby, this would be it. The dough is the same deep, cocoa rich base, but it is loaded with mini chocolate chips, marshmallows, and crumbled graham crackers. The marshmallows melt into gooey pockets, the graham crackers stay a little crunchy, and the whole thing tastes like a campfire in cookie form.

A few things that make these turn out right: weigh your flour if you can (145 grams here), because scooping from the bag packs in extra and makes a drier cookie. Chill the dough for at least 30 minutes so the cookies bake up thick instead of spreading flat. And pull them at 8 minutes, when the edges are set but the centers still look slightly underdone. They finish setting on the pan and stay soft and chewy.
